Step 1
Slice the Bacon Take slices of bacon and cut them into small bite-sized pieces.

Cook the Meats Heat a large skillet over medium heat. Add the chopped bacon and sausage to the skillet and cook until the bacon is crispy and sausage is browned. Remove both from the skillet and set aside. Leave the drippings in the pan for extra flavor.

Peel and Dice the Potato Peel and dice potato using a vegetable peeler or knife.

Slice the Red Pepper Remove the stem and seeds from the red bell pepper, then slice it into thin strips.

Cook the Veggies Add the diced potatoes and sliced red pepper to the same skillet (with the bacon/sausage drippings). Season with salt and pepper to taste. Cook, stirring occasionally, for about 10–12 minutes or until the potatoes are golden brown and tender.

Add the Eggs and Spinach Push the cooked potatoes and peppers to one side of the skillet. Crack eggs and scramble gently as they cook. Once eggs begin to set, stir in spinach and let it wilt.

Add Back the Meats and Top with Cheese Return the cooked bacon and sausage to the skillet. Stir everything together so the flavors combine. Sprinkle shredded cheese evenly over the top. Let it melt for 1–2 minutes before serving
