Prep the Potatoes

Cut potatoes into fries (about ¼" thick).
2 large Russet potatoes

Soak in cold water for 30 minutes. Drain and dry very well.

Mix mayo, mashed garlic, lemon juice, pepper, and salt. Let it chill in refrigerator until done with fries to let the flavor develop.

Fry the Fries

Heat olive oil in a pot to 350°F (175°C). Fry potatoes in small batches for 3–4 minutes, until soft

Drain on paper towels and season with salt immediately.
Top the Fries

Press garlic directly over the fries, top with parsley, parmesan and lemon
